Pesto Salmon with Spinach Orzo
Herb-Crusted Pesto Salmon with Creamy Spinach Orzo
Ingredients:
2 salmon fillets (about 6 oz each)
3 tablespoons fresh pesto (store-bought or homemade)
1 tablespoon olive oil
1/2 lemon, juiced
1 cup orzo pasta
2 cups fresh spinach, chopped
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon butter
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh basil leaves for garnish
Directions:
Preheat oven to 375°F (190°C). Place salmon fillets on a baking sheet lined with parchment. Brush each fillet with pesto and drizzle with lemon juice.
Bake salmon for 12–15 minutes until tender and flaky.
Meanwhile, cook orzo pasta in salted boiling water according to package directions. Drain and set aside.
In a skillet, heat olive oil and butter over medium heat. Add garlic and sauté until fragrant.
Stir in chopped spinach and cook until wilted, about 2 minutes.
Toss in the cooked orzo, Parmesan, salt, and pepper. Mix well until creamy.
Plate the spinach orzo, top with pesto-coated salmon, and garnish with fresh basil.
