Lush Green Velvet Cake with Irish Cream Frosting
Ingredients:
2½ cups all-purpose flour (for a gluten-free option, use a 1:1 gluten-free flour blend)
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1½ cups granulated sugar
1 cup vegetable oil
2 large eggs
1 cup buttermilk
1 tablespoon white vinegar
1 tablespoon vanilla extract
1½ tablespoons green food coloring (gel preferred)
For the Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
3½ cups powdered sugar
1 teaspoon vanilla extract
Optional: green sprinkles or shaved white chocolate for garnish
Directions:
Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, whisk together sugar and oil until smooth. Add eggs one at a time, beating after each addition.
Stir in buttermilk, vinegar, vanilla, and green food coloring. Mix until evenly colored.
Gradually add the dry ingredients into the wet mixture, stirring until fully combined.
Divide the batter evenly between the prepared pans. Smooth the tops.
Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
Let cakes cool in the pans for 10 minutes, then remove and allow to cool completely on wire racks.
While cakes cool, prepare the frosting. Beat cream cheese and butter until fluffy. Add powdered sugar gradually, beating until smooth. Mix in vanilla extract.
Once cakes are cooled, frost one layer, then place the second layer on top and frost the entire cake. Garnish as desired.
