Rich Chocolate Strawberry Swirl Cheesecake π«ππ°
Ingredients:
1 1/2 cups chocolate cookie crumbs (like Oreo) πͺ
1/4 cup granulated sugar π¬
1/2 cup unsalted butter, melted π§
16 oz (2 packages) cream cheese, softened π§
1 cup granulated sugar π¬
1 tsp vanilla extract π
3 large eggs π₯
1 cup sour cream π₯
1/2 cup unsweetened cocoa powder π«
1/2 cup semi-sweet chocolate chips, melted π«
1 cup fresh strawberries, hulled and sliced π
1/4 cup granulated sugar π¬
1 tbsp lemon juice π
1 tbsp cornstarch (optional, for thickening) π₯£
Directions:
1. First, letβs get that oven heated! Preheat it to 325Β°F (160Β°C) and grease a 9-inch springform pan.
2. Next up, combine those delicious chocolate cookie crumbs, granulated sugar, and melted butter in a bowl. Press that mixture firmly into the bottom of the pan, then pop it in the oven for about 10 minutes. Let it cool.
3. While the crust is cooling, letβs make that lovely strawberry swirl! In a saucepan, toss in your hulled strawberries, granulated sugar, lemon juice, and cornstarch. Cook this over medium heat until it thickens upβabout 5-7 minutes. Once thickened, let it cool.
4. Time to make that creamy cheesecake filling! Beat together the softened cream cheese and granulated sugar until smooth. Add in the vanilla extract and mix it all up. Gradually add the eggs, one at a time, mixing well after each addition. Stir in the sour cream, cocoa powder, and melted chocolate until it's all smooth and creamy.
5. Here comes the fun part! Pour half of the cheesecake filling over the cooled crust. Then, drop spoonfuls of that beautiful strawberry mixture on top and swirl it around. Repeat this process with the remaining filling and strawberry mixture.
6. Bake the cheesecake for 50-60 minutes until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an hour to cool gradually. Once itβs cooled to room temperature, refrigerate it for 4 hours, or better yet, overnight for maximum flavor!
7. When youβre ready to delight yourself, remove the cheesecake from the springform pan, slice it up, and enjoy! Optional: garnish with fresh strawberries or a dollop of whipped cream for an extra treat.
