Italian Sausage with Peppers and Onions
Serves: 4 | Prep Time: 10 mins | Cook Time: 30 mins
🧄 Ingredients:
1 lb (450g) Italian sausage (mild or spicy, your choice)
1 tbsp olive oil
1 large yellow onion, thinly sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 cloves garlic, minced
1/2 tsp dried oregano
1/2 tsp dried basil
Salt & black pepper, to taste
1/4 tsp red pepper flakes (optional, for heat)
1/4 cup chicken broth or dry white wine
Fresh chopped parsley (for garnish)
🔥 Instructions:
Brown the Sausage:
In a large skillet over medium heat, cook the sausages until browned on all sides (about 7–10 minutes). Remove and set aside (they don’t need to be fully cooked yet).
Sauté Veggies:
In the same skillet, add olive oil. Toss in the onions and bell peppers. Sauté for 5–7 minutes until soft and slightly caramelized.
Add garlic, oregano, basil, red pepper flakes, salt, and pepper. Cook another 1–2 minutes.
Simmer Together:
Slice the browned sausages into thick coins or leave whole.
Add sausage back to the pan with the peppers and onions. Pour in broth or wine.
Cover and simmer for 10–15 minutes until sausages are fully cooked and the flavors meld.
Garnish & Serve:
Sprinkle with fresh parsley before serving.
