Apple Cider Glazed Chicken with Spinach Penne
Sweet Apple Cider Glazed Chicken over Creamy Spinach Penne
Ingredients:
12 oz penne pasta
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup pure apple cider (non-alcoholic)
2 tablespoons Dijon mustard
2 tablespoons honey
2 cups fresh spinach
1/4 cup grated Parmesan cheese (optional)
1/4 cup chicken broth (low sodium)
1 tablespoon butter
Directions:
Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a small bowl, whisk together the apple cider, Dijon mustard, and honey. Set aside.
Season the chicken breasts with garlic powder, paprika, salt, and pepper.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes per side, or until golden brown and fully cooked through. Remove chicken from skillet and set aside.
In the same skillet, add the butter, then pour in the apple cider mixture and chicken broth. Bring to a simmer and cook for 4-5 minutes until slightly thickened.
Return the chicken to the skillet, spooning the glaze over the top. Simmer for another 2-3 minutes.
Toss the cooked penne pasta with the fresh spinach until the spinach wilts slightly.
Serve the glazed chicken over the spinach penne, drizzling extra glaze on top. Sprinkle with Parmesan cheese if desired.
