🛒 Ingredients:
2 boiled eggs (medium or hard-boiled), sliced
1 ripe avocado, diced
1/2 cucumber, thinly sliced
1/2 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1/4 yellow bell pepper, diced (optional)
2 tbsp fresh parsley or cilantro, chopped
1 tbsp olive oil
1 tbsp lemon juice
Salt & black pepper to taste
1/2 tsp dried oregano or sumac (optional)
