Steak with Shrimp & Lobster Sauce
Surf and Turf Steak with Shrimp & Lobster Cream Sauce
Ingredients:
2 x 8 oz filet mignon steaks, 1 1/2 - 2 inches thick
Garlic powder
1 Tbsp onion powder
Salt
Pepper
1 Tbsp olive oil
2 Tbsp unsalted butter
4 thyme sprigs
2 garlic cloves
2 lobster tails, medium, shell removed, cut into 1-inch pieces
1 lb large shrimp, peeled, deveined, tail off
All-purpose seasoning
Paprika
8 Tbsp unsalted butter
1/4 cup clam juice
1 1/2 cups heavy cream
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 1/2 tsp smoked paprika
Directions:
Season the filet mignon steaks with garlic powder, onion powder, salt, and pepper. Set aside.
Heat 1 Tbsp of olive oil in a skillet over medium-high heat. Add 2 Tbsp of unsalted butter and allow it to melt.
Add the thyme sprigs and garlic cloves to the skillet, followed by the steaks. Sear the steaks on each side for about 3-4 minutes, or until they reach your desired level of doneness. Remove the steaks from the skillet and set aside to rest.
In the same skillet, add the lobster tail pieces and shrimp. Season with all-purpose seasoning, salt, pepper, paprika, garlic powder, and onion powder. Sauté for about 3-4 minutes until the seafood is just cooked through. Remove and set aside.
In the skillet, melt 8 Tbsp of unsalted butter. Add the clam juice and heavy cream, stirring to combine. Let the sauce simmer and reduce slightly for about 5 minutes.
Season the sauce with salt, pepper, garlic powder, onion powder, and smoked paprika. Stir well and cook for another 2 minutes until the sauce thickens.
Return the cooked shrimp and lobster to the skillet, tossing them in the sauce to coat.
Serve the steaks topped with the shrimp and lobster sauce. Garnish with additional thyme or fresh herbs if desired.
