πŸ₯ Cinnamon Roll Poke Cake 🍯
Ingredients
Cake Layer
1 box vanilla cake mix (and the eggs, oil, water called for on the box)
Cinnamon Filling
1 can (14 oz) sweetened condensed milk
4 tbsp melted salted butter
Β½ cup packed brown sugar
2 tsp ground cinnamon
Cream Cheese Frosting
4 oz (Β½ block) cream cheese, softened to room temperature
β…“ cup butter, softened
2 cups powdered (confectioners’) sugar
1 tsp vanilla extract
1 tbsp heavy cream or milk
Topping (Optional)
Cinnamon sugar (a mix of sugar + cinnamon to sprinkle)

Instructions

Bake the cake

Preheat your oven to 350Β°F (β‰ˆ 175Β°C).

Grease a 9Γ—13-inch baking dish.

Prepare vanilla cake batter according to the box instructions (eggs, oil, water). Pour into the baking dish. Bake until a toothpick inserted in center comes out clean. Let cake cool slightly.

Poke the cake

Once cake has cooled (but not completely cold), use the handle of a wooden spoon (or similar rounded utensil) to poke holes spaced about 1 inch apart all over the cake.

Add the cinnamon filling

In a bowl, mix sweetened condensed milk, melted butter, brown sugar, and cinnamon until smooth.

Pour this mixture over the cake, making sure to fill the holes. Spread gently with back of spoon or knife so the filling seeps into the holes.

Make the frosting

In a mixing bowl, beat together softened cream cheese and butter until creamy.

Gradually add powdered sugar, vanilla extract, and heavy cream (or milk) until frosting is smooth and spreadable.

Finish & chill

Spread the cream cheese frosting evenly over the top of the cake.

Optionally, mix a little cinnamon with sugar and sprinkle over the frosting.

Refrigerate the cake for at least 1 hour so that the filling sets up well and the flavors meld.

Serve

After chilling, slice into squares and serve chilled (or slightly more room temperature for softer texture).
