🥑 Avocado Toast with Soft-Boiled Eggs & Everything Spice 🌶️🍞
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
2 slices of hearty whole grain or sourdough bread, toasted
1 ripe avocado
2 soft-boiled eggs (6–7 minutes for that jammy yolk)
1 tsp lemon juice
Salt and pepper to taste
1/2 tsp red pepper flakes
1/2 tsp chia seeds or everything bagel seasoning
Optional: olive oil drizzle or microgreens on top
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
🥚 Bring water to a boil, gently lower in the eggs, and simmer for 6–7 minutes. Transfer to an ice bath immediately after cooking. Peel once cool.
🥑 Mash the avocado in a bowl with lemon juice, salt, and pepper until creamy.
🍞 Toast the bread slices until golden and crisp.
✨ Spread mashed avocado over each toast slice.
🔪 Slice the soft-boiled eggs in half and layer them on the toast.
🌶️ Sprinkle with red pepper flakes, chia seeds or everything bagel seasoning.
Optional: Drizzle lightly with olive oil or garnish with microgreens.
Enjoy immediately while the toast is crisp and the yolks are jammy!
