Butter Pecan Cupcakes
Ingredients:
For the Cupcakes:
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter, softened
¾ cup brown sugar
2 large eggs
1 teaspoon vanilla extract
½ cup whole milk
½ cup toasted pecans, chopped
For the Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
3 cups powdered sugar
2 teaspoons vanilla extract
Pinch of salt
Additional toasted pecans for topping
Instructions:
1️⃣ Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
2️⃣ In a bowl, whisk together flour, baking powder, and salt.
3️⃣ In another bowl, beat butter and brown sugar until fluffy. Add eggs one at a time, then mix in vanilla.
4️⃣ Alternately mix in dry ingredients and milk until combined. Fold in toasted pecans.
5️⃣ Divide batter among cupcake liners and bake for 18-20 minutes or until a toothpick comes out clean. Let cool.
6️⃣ For the frosting: Beat cream cheese and butter until smooth. Slowly add powdered sugar, vanilla, and salt. Beat until fluffy.
7️⃣ Pipe onto cooled cupcakes and top with extra toasted pecans for the perfect crunch!
