Ingredients
For the Cupcakes:
1 Β½ cups (190g) all-purpose flour
1 tsp baking powder
Β½ tsp baking soda
Β½ tsp salt
1 tsp cinnamon
Β½ cup (115g) unsalted butter, softened
ΒΎ cup (150g) granulated sugar
2 large eggs
1 tsp vanilla extract
Β½ cup (120ml) buttermilk
For the Cheesecake Filling:
8 oz (225g) cream cheese, softened
ΒΌ cup (50g) granulated sugar
1 tsp vanilla extract
For the Apple Cinnamon Filling:
1 apple, finely diced
2 tbsp brown sugar
Β½ tsp cinnamon
1 tbsp butter
For the Frosting:
1 cup (230g) unsalted butter, softened
2 cups (250g) powdered sugar
1 tsp vanilla extract
2 tbsp caramel sauce
Cinnamon, for garnish
Instructions
Making the Cupcakes:
Preheat oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
Mix Dry Ingredients β In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
Cream Butter & Sugar β Beat butter and sugar until fluffy.
Add Eggs & Vanilla β Mix in eggs one at a time, then add vanilla.
Combine Wet & Dry β Alternate adding flour mixture and buttermilk. Mix until just combined.
Fill Liners β Fill cupcake liners halfway and bake for 18-20 minutes. Cool completely.
Making the Fillings:
Cheesecake Filling β Beat cream cheese, sugar, and vanilla until smooth.
Apple Cinnamon Filling β Cook diced apples, brown sugar, cinnamon, and butter over medium heat until apples soften. Let cool.
Assembling the Cupcakes:
Core each cupcake and fill the center with cheesecake and apple cinnamon filling.
Make the Frosting β Beat butter, powdered sugar, vanilla, and caramel sauce until smooth.
Pipe Frosting onto cupcakes and sprinkle with cinnamon.
