Slow Cooker Pot Roast with Mashed Potatoes
Ingredients:
For the Pot Roast:
2.5 to 3 lbs chuck roast
1 tbsp oil
1 onion, chopped
3 cloves garlic, minced
1 packet brown gravy mix
1 packet ranch seasoning
1 packet Italian dressing mix
1 cup beef broth
2 tbsp cornstarch + 2 tbsp water (for thickening, optional)
For the Mashed Potatoes:
2 lbs potatoes, peeled and chopped
4 tbsp butter
1/2 cup milk
Salt & pepper to taste
Directions:
1. Sear roast in oil until browned on all sides.
2. Place roast in slow cooker. Add onion, garlic, seasoning packets, and broth.
3. Cook on low 8 hrs or high 4–5 hrs until tender.
4. Remove roast and shred. Optional: thicken juices with cornstarch slurry.
5. Boil potatoes until soft, then mash with butter, milk, salt & pepper.
6. Serve shredded roast over mashed potatoes with gravy.
