Made this Cajun chicken with creamy Parmesan linguine pasta, and wow! The flavors are incredible. It’s got just the right amount of spice and a creamy sauce that’ll make you want seconds. Definitely a new favorite in our house!
Ingredients:
2 boneless, skinless chicken breasts, cut into strips
12 oz linguine pasta
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Start by mixing the Cajun seasoning, smoked paprika, garlic powder, salt, and pepper in a small bowl. Coat the chicken strips evenly with this spice mix, making sure each piece is well-seasoned.
Next, heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and cook for 6 to 7 minutes, turning them halfway through, until they’re golden brown and fully cooked. Once done, remove the chicken from the skillet and set it aside.
While the chicken is cooking, bring a pot of salted water to a boil and cook the linguine pasta according to the package directions. Once it’s done, drain the pasta, saving 1/2 cup of the pasta water for later.
In the same skillet, add a little more olive oil if necessary and sauté the garlic for about 1 minute, just until it becomes aromatic. Pour in the chicken broth and use a spoon to scrape any browned bits off the skillet. Stir in the heavy cream and bring everything to a simmer, allowing it to cook for 2 to 3 minutes until the sauce thickens slightly.
Add the cooked linguine pasta to the skillet and toss it in the creamy sauce. Stir in the Parmesan cheese and let it cook for another 1 to 2 minutes, until the cheese is melted and the sauce is nice and creamy.
Finally, return the cooked Cajun chicken to the skillet, mixing it all together. Garnish with fresh parsley and serve right away.
