🇮🇹 Spaghetti alla Nerano ❤️
A creamy and cheesy pasta from the Amalfi Coast with golden zucchini slices!
📝 You will need:
• 2 zucchinis, sliced into rounds
• 340 g spaghetti
• 60 g Parmesan cheese, grated
• Olive oil, for frying
• Salt & pepper, to taste
• Fresh basil (optional)
👩🍳 Instructions:
1️⃣ Fry zucchini slices in olive oil until golden. Drain on paper towels.
2️⃣ Cook spaghetti until al dente. Reserve 1/2 cup pasta water and drain.
3️⃣ Blend half the zucchini with a splash of pasta water and Parmesan to make a creamy sauce.
4️⃣ Toss spaghetti with the zucchini sauce and remaining zucchini slices.
5️⃣ Season with salt, pepper, and fresh basil. Serve immediately.
