Creamy Tuscan Salmon & Shrimp over Mash π§π
A gourmet restaurant-style meal made right at home!
π Ingredients:
2 salmon fillets (skin-off)
Β½ lb shrimp, peeled & deveined
1 bunch asparagus, trimmed
3 cups mashed potatoes (prepared)
2 tbsp olive oil
1 tbsp butter
Salt & pepper to taste
1 tsp smoked paprika
1 tsp garlic powder
Creamy Tuscan Sauce:
1 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
Β½ cup grated Parmesan cheese
1 cup fresh spinach, chopped
ΒΌ cup sun-dried tomatoes, chopped
Salt & pepper to taste
Chopped parsley (for garnish)
π½οΈ Directions:
1οΈβ£ Cook the Asparagus:
Toss asparagus with olive oil, salt, and pepper. Roast at 400Β°F (200Β°C) for 12β15 minutes until tender and slightly crispy.
2οΈβ£ Sear the Salmon & Shrimp:
Season salmon and shrimp with salt, pepper, paprika, and garlic powder. In a skillet, heat butter and sear salmon 4β5 minutes per side. Set aside. SautΓ© shrimp 2β3 minutes per side until pink.
3οΈβ£ Make the Tuscan Sauce:
In the same skillet, melt butter and sautΓ© garlic. Stir in cream, Parmesan, sun-dried tomatoes, and spinach. Simmer until slightly thickened.
4οΈβ£ Combine & Layer:
Return salmon and shrimp to the skillet. Spoon sauce over and let it simmer together for 2β3 minutes to blend flavors.
5οΈβ£ Assemble the Plate:
Scoop mashed potatoes onto the plate, layer roasted asparagus, then top with salmon and shrimp. Spoon extra sauce over the top and garnish with parsley.
