Crunchy & Fiery Spicy Roasted Chickpea Trail & Snack Mix Treat 🔥🌶️😋

Ingredients
1 can (15 oz / 425g) chickpeas, rinsed and drained thoroughly
1 tbsp (15ml) olive oil
1 tsp (3g) smoked paprika
1/2 tsp (1.5g) chili powder (adjust to taste)
1/4 tsp (1g) cayenne pepper (optional, for extra heat)
1/4 tsp (1g) garlic powder
1/4 tsp (1.5g) salt
1/2 cup (70g) raw almonds
1/2 cup (65g) raw pumpkin seeds (pepitas)
1/4 cup (35g) sunflower seeds
Optional: 1/4 cup (40g) dried cranberries or raisins for a sweet contrast after roasting

Directions
1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
2. Pat the rinsed chickpeas completely dry with paper towels. This is crucial for crispiness. Remove any loose skins.
3. In a bowl, toss the dry chickpeas with olive oil until coated.
4. Add smoked paprika, chili powder, cayenne (if using), garlic powder, and salt. Toss again until chickpeas are evenly seasoned.
5. Spread the seasoned chickpeas in a single layer on one half of the prepared baking sheet.
6. Roast for 15 minutes.
7. While chickpeas roast, in the same bowl (no need to wash), toss the almonds, pumpkin seeds, and sunflower seeds with a tiny drizzle more olive oil if needed (just enough to help seasoning stick, optional).
8. After 15 minutes, remove the baking sheet, add the nut and seed mixture to the other half of the sheet in a single layer.
9. Return the sheet to the oven and roast for another 10-15 minutes, tossing halfway, until chickpeas are crispy and nuts/seeds are lightly toasted. Watch carefully to prevent burning.
10. Let the mix cool completely on the baking sheet. They will crisp up more as they cool. If adding dried fruit, stir it in once the mix is completely cool. Store in an airtight container.
