Luscious Blueberry Swirl Cheesecake with White Chocolate Dream Crust

Ingredients:
For the crust:
2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the cheesecake filling:
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1/4 cup sour cream
1/2 cup heavy cream
6 oz white chocolate, melted and slightly cooled
1 cup fresh or frozen blueberries
For the blueberry swirl:
1 cup blueberries
2 tbsp sugar
1 tsp lemon juice
Directions:
Preheat your oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper and lightly grease the sides.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until all crumbs are evenly coated. Press the mixture firmly into the bottom of the pan to create a crust. Bake for 10 minutes, then let cool.
Meanwhile, prepare the blueberry swirl: In a small saucepan over medium heat, combine the blueberries, sugar, and lemon juice. Cook for 5–7 minutes until berries break down and the sauce thickens slightly. Strain through a fine mesh sieve to remove skins and seeds. Let cool.
In a large mixing bowl, beat the cream cheese until smooth and fluffy. Add the sugar and continue beating until fully incorporated. Beat in the eggs one at a time, scraping the sides of the bowl as needed. Add vanilla, sour cream, and heavy cream and mix until smooth.
Fold in the melted white chocolate. Gently stir to combine.
Pour half the cheesecake batter over the cooled crust. Add spoonfuls of blueberry sauce and swirl with a knife or toothpick. Repeat with the remaining batter and more blueberry swirl on top.
Bake in a water bath (place the springform pan inside a larger pan filled with 1 inch of hot water) for 55–65 minutes or until the edges are set but the center is slightly jiggly.
Turn off the oven and crack the oven door. Let cheesecake cool inside the oven for 1 hour to prevent cracking. Then refrigerate for at least 4 hours or overnight.
Garnish with white chocolate shavings and fresh blueberries before serving, if desired.
