Ingredients:
4 cups fresh strawberries, hulled and roughly chopped
1 cup granulated sugar
2 large jalapeños, finely diced (remove seeds for less heat)
1/4 cup lemon juice
1 packet (1.75 oz) fruit pectin
Directions:
In a large saucepan over medium heat, combine the strawberries, sugar, and jalapeños. Cook, stirring frequently, until the berries break down and the sugar dissolves, about 10 minutes.
Add the lemon juice and pectin. Increase heat to bring the mixture to a full rolling boil that cannot be stirred down.
Once boiling, continue to cook for 1 minute, stirring constantly.
Remove from heat. If you prefer a smoother jam, use an immersion blender to lightly puree the mixture in the pot.
Skim off any foam with a spoon.
Ladle the hot jam into sterilized jars, leaving about 1/4 inch headspace. Wipe the rims clean, then seal the jars.
Process the jars in a boiling water canner for 10 minutes.
Remove jars and allow to cool completely. Check seals; the lids should not flex when the center is pressed.
