Pancake Cereal
Ingredients:
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk (or milk)
1 egg
2 tablespoons melted butter
Butter and maple syrup, for serving
Instructions:
In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix buttermilk, egg, and melted butter.
Combine wet and dry ingredients until just mixed (don’t overmix).
Transfer the batter into a squeeze bottle or piping bag with a small tip.
Heat a nonstick skillet over medium heat and lightly grease it.
Pipe small dots of batter onto the skillet.
Cook for 1–2 minutes until bubbles form, then flip and cook another 1–2 minutes.
Remove from pan and repeat with remaining batter.
Serve the mini pancakes in a bowl with a pat of butter and a drizzle of maple syrup.
