Traditional Lancashire Hotpot π₯π
This comforting British classic is a rich, hearty stew made with tender lamb, vegetables, and thinly sliced potatoes. Slowly cooked until golden and bubbling, Lancashire Hotpot is the perfect dish to warm you up on a chilly day, offering a true taste of Lancashire.
π Ingredients:
π Lamb neck fillet or shoulder β 600g, cut into chunks

Onion β 1, chopped
π₯ Carrots β 2, sliced
π₯ Potatoes β 800g, thinly sliced
π§΄ Olive oil β 2 tablespoons
π§ Salt β to taste
πΆοΈ Black pepper β to taste
πΏ Fresh thyme β 2 sprigs (or 1 teaspoon dried thyme)
π₯ Worcestershire sauce β 1 tablespoon
π· Vegetable stock β 500ml
π° Bay leaves β 2
π³ Butter β 25g, for dotting on top
π©βπ³ Method:
1. Preheat the Oven:
π§βπ³ Preheat your oven to 160Β°C (fan).
2. Brown the Lamb:
π Heat the olive oil in a large frying pan over medium heat.
Brown the lamb chunks in batches for 5β6 minutes, ensuring they are seared on all sides.
Remove from the pan and set aside.
3. Cook the Vegetables:

In the same pan, add the chopped onion and cook for 4β5 minutes until softened.
π₯ Add the sliced carrots and cook for another 2 minutes.
4. Combine Ingredients:
π· Return the lamb to the pan, then stir in the Worcestershire sauce, fresh thyme, bay leaves, salt, and pepper.
Pour in the vegetable stock and bring to the boil.
5. Simmer:
π² Reduce the heat and simmer for 15β20 minutes, until the lamb is tender.
6. Layer the Potatoes:
π₯ While the stew is simmering, layer the sliced potatoes over the top of the meat and vegetable mixture.
Season with salt and pepper, then drizzle with a little extra olive oil.
π§ Dot the top with small pieces of butter.
7. Bake:
π₯ Cover the dish with foil and bake in the oven for 1.5 to 2 hours, removing the foil for the last 30 minutes to allow the potatoes to become golden and crispy.
8. Rest and Serve:
