Spinach and Ricotta Balls

Ingredients:

2 cups fresh spinach, chopped
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1/2 teaspoon nutmeg
Salt and pepper to taste
Olive oil for drizzling
Directions:

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large skillet over medium heat, sauté the chopped spinach for 3-4 minutes, stirring occasionally, until wilted. Remove from heat and let it cool slightly.
In a large mixing bowl, combine the ricotta cheese, grated Parmesan, breadcrumbs, egg, minced garlic, nutmeg, salt, and pepper. Mix well until all ingredients are fully incorporated.
Add the cooled spinach to the mixture and stir until evenly distributed.
Using your hands, form the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
Drizzle the balls lightly with olive oil to help them brown in the oven.
Bake for 20-25 minutes, or until the balls are golden brown and firm to the touch.
Remove from the oven and let them cool slightly before serving.
