Ingredients
For the Chicken Skewers:
1 chicken breast, cut into cubes
1 tbsp olive oil
1 tsp smoked paprika

Β½ tsp garlic powder
Salt & black pepper, to taste

Wooden or metal skewer
For the Salad:
2 cups mixed greens (romaine, spinach, or your favorite blend)
Β½ cup cherry tomatoes, halved
ΒΌ cucumber, sliced
ΒΌ red onion, thinly sliced
ΒΌ avocado, diced
ΒΌ cup pomegranate seeds
6β8 Kalamata olives
Optional: peach slices or yellow tomatoes for a touch of sweetness

1 tbsp olive oil
1 tbsp lemon juice

Instructions

Combine the chicken with olive oil, spices, salt, pepper, and lemon juice. Let it marinate for 15 minutes, then thread onto a skewer.
