Blackened Salmon Stuffed with Spinach & Parmesan
Ingredients:
2 salmon fillets
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp cayenne pepper
½ tsp salt
½ tsp black pepper
For the Filling:
½ cup baby spinach, chopped
¼ cup grated parmesan cheese
¼ cup cream cheese, softened
1 clove garlic, minced
Directions:
Preheat oven to 375°F (190°C).
In a small bowl, mix spinach, parmesan, cream cheese, and garlic.
Slice a pocket into each salmon fillet and stuff with the spinach mixture.
In another bowl, mix paprika, garlic powder, onion powder, cayenne, salt, and black pepper.
Rub the seasoning mixture over the salmon fillets.
Heat a skillet over medium-high heat and sear the salmon for 2 minutes per side.
Transfer to the oven and bake for 10 minutes until fully cooked.
