Dulce de Leche Chocolate Cheesecake Bars

Ingredients:
For the Crust:
2 cups crushed chocolate sandwich cookies (like Oreos)
5 tablespoons unsalted butter, melted
For the Cheesecake Layer:
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup sour cream
¾ cup dulce de leche
For the Ganache Layer:
1 cup semisweet chocolate chips
½ cup heavy cream
Directions:
Preheat oven to 325°F (160°C). Line an 8x8-inch pan with parchment paper.
In a bowl, mix crushed cookies with melted butter. Press firmly into the bottom of the pan to form the crust. Bake for 8 minutes. Let cool slightly.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing well after each. Stir in vanilla extract and sour cream until fully combined.
Pour cheesecake batter over the crust and smooth the top. Drizzle dulce de leche over the top and swirl gently with a knife.
Bake for 35–38 minutes or until center is set. Let cool completely, then refrigerate for at least 4 hours.
To make the ganache, heat the cream until just simmering and pour over chocolate chips. Let sit for 2 minutes, then stir until smooth.
Spread ganache over the chilled cheesecake layer. Refrigerate 1 hour more before slicing into bars.
