Almond Butter Cake
Ingredients
For the cake:
1 cup (226g) unsalted butter, softened
1 cup (200g) granulated sugar
3 large eggs
1 tsp almond extract
1 ½ cups (190g) all-purpose flour
½ tsp baking powder
¼ tsp salt
½ cup (60g) almond flour or finely ground almonds
½ cup (120ml) milk
Optional topping:
Sliced almonds for garnish
Powdered sugar for dusting
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
Cream the butter and sugar together until pale and fluffy.
Add eggs one at a time, beating well after each. Stir in almond extract.
In a separate bowl, whisk flour, almond flour, baking powder, and salt.
Gradually add dry ingredients to the wet mixture, alternating with milk. Mix just until combined.
Pour batter into the prepared pan. Smooth the top and sprinkle sliced almonds (if using).
Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack.
Dust with powdered sugar before serving, if desired.
