Blueberry Pie - 2 Delicious Ways
cream cheese pie ingredients:
3 cups fresh blueberries, approximately 1 pound container
2 tablespoons cold water
3 tablespoons granulated sugar
1 teaspoon fresh lemon zest
1 tablespoon fresh lemon juice
1 tablespoon cornstarch
Cream Cheese Filling
9 ounces graham cracker crust (10-inch)
½ cup cold water
2¼ teaspoons unflavored gelatin, 1 packet from a 1-ounce box (I used the Knox brand)
1 cup heavy whipping cream, very cold
12 ounces cream cheese, softened to room temperature
2 teaspoons vanilla extract
2 cups powdered sugar, siftedclassic pie ingredients:
2 premade pie crust, either from the store or using our homemade pie crust recipe
garnish with cool whip
Frozen Blueberry Filling
5 cups frozen blueberries, do not thaw the berries
6 tablespoons cornstarch
1½ cups granulated sugar
1 lemon zest
1 tablespoon lemon juice, from the zested lemon
1 teaspoon vanilla extract
Egg Wash
1 large whole egg
1 tablespoon cold water
