Cajun Chicken and Spinach Garlic Butter Penne

Ingredients:

2 boneless, skinless chicken breasts, cut into strips
12 oz penne pasta
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 tablespoon butter
2 cups fresh spinach, chopped
1/2 cup grated Parmesan cheese
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)

Directions:

1. Cook the Penne: Bring a pot of salted water to a boil. Cook the penne according to the package instructions, then drain and set aside, reserving 1/4 cup of pasta water.
2. Season the Chicken: In a large bowl, toss the chicken strips with Cajun seasoning, smoked paprika, salt, and black pepper.
3. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-6 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
4. Make the Garlic Butter Sauce: In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring the sauce to a gentle simmer and cook for 3-4 minutes until it thickens slightly.
5. Add the Spinach: Stir in the chopped spinach and cook for another 2-3 minutes until wilted and tender.
6. Combine Pasta and Chicken: Add the cooked penne to the skillet, tossing to coat in the creamy sauce. Stir in the cooked chicken and Parmesan cheese. If needed, add a bit of the reserved pasta water to loosen the sauce.
7. Season and Serve: Taste and adjust the seasoning with salt and black pepper. Garnish with fresh parsley and serve immediately.
