Creamy coconut-lime pasta tossed with garlic, herbs, and chili β topped with crispy coconut shrimp and flaky fish for a seafood pasta with a tropical twist! π΄β¨
π Ingredients (Serves 2β3):
π¦ For the Coconut Shrimp:
Β½ lb (225g) large shrimp, peeled and deveined
Β½ cup all-purpose flour
2 eggs, beaten
ΒΎ cup panko breadcrumbs
1 cup sweetened shredded coconut π₯₯
Salt & pepper
Oil for frying
π For the Fish:
Β½ lb (225g) white fish (e.g., cod, halibut, or snapper), cut into bite-sized pieces
1 tbsp olive oil
Salt, pepper, and a pinch of paprika
Optional: a splash of lime juice π
π For the Pasta:
8 oz (225g) linguine, spaghetti, or fettuccine
1 tbsp olive oil
3 garlic cloves, minced
ΒΌ tsp red chili flakes (optional for heat) πΆοΈ
1 cup full-fat coconut milk π₯₯
Zest and juice of 1 lime π
Β½ cup grated Parmesan (optional, or use nutritional yeast for dairy-free)
Salt & pepper to taste
Fresh chopped basil or cilantro for garnish πΏ
π©βπ³ Instructions:
1. Cook the Pasta:
Boil pasta in salted water until al dente. Reserve Β½ cup of pasta water before draining. Set aside.
2. Make Coconut Shrimp:
Prepare 3 bowls:
Flour + salt & pepper
Beaten eggs
Panko + shredded coconut
Coat shrimp: flour β egg β coconut-panko.
Fry in hot oil (350Β°F / 175Β°C) for 2β3 mins per side until golden and crisp. Drain on paper towels.
3. Cook the Fish:
Season fish chunks with salt, pepper, and paprika.
Heat oil in a skillet and sear fish for 2β3 minutes per side until golden and cooked through. Add lime juice if desired. Set aside.
4. Prepare Coconut Cream Sauce:
In a large pan, heat 1 tbsp olive oil. SautΓ© garlic and red pepper flakes for 30 seconds.
Stir in coconut milk and lime zest. Simmer gently for 3β5 minutes.
Stir in lime juice, Parmesan (if using), salt, and pepper.
Toss in the cooked pasta and mix. If needed, loosen the sauce with reserved pasta water. Simmer for 1 more minute.
5. Assemble:
Plate creamy coconut pasta into bowls or plates.
Top with coconut shrimp and pan-seared fish.
Garnish with fresh herbs and extra lime zest.
