Pancake Breakfast Sandwich
Ingredients:
- 4 large pancakes (store-bought or homemade)
- 4 large eggs
- 4 slices cheddar cheese
- 8 slices cooked turkey bacon
- 1 avocado, sliced
- 1 tablespoon butter
- Salt and pepper to taste
- Maple syrup (optional)
Directions:
1. Heat a non-stick skillet over medium heat and melt the butter.
2. Crack the eggs into the skillet and cook to your preference (sunny-side up or over easy). Season with salt and pepper.
3. While the eggs are cooking, warm the pancakes in a separate pan or microwave until soft and pliable.
4. Assemble the sandwich by placing one slice of cheddar cheese on a pancake.
5. Add two slices of turkey bacon, a cooked egg, and some avocado slices.
6. Top with another pancake to complete the sandwich.
7. Repeat for the remaining sandwiches.
8. Serve warm with a drizzle of maple syrup if desired.
