π Pumpkin French Toast Sticks π―
Ingredients
For the Toast:
1 loaf (about 12 oz) of slightly stale French bread, brioche, or challah
4 large eggs

cup milk (whole or plant-based)
Β½ cup pure pumpkin purΓ©e
1Β½ teaspoons vanilla extract
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
For the Cinnamon Sugar Coating:
ΒΌ cup granulated sugar
1Β½ teaspoons ground cinnamon
Instructions
Prep the bread: Cut the bread into 1-inch-thick slices, then cut each slice into 3 equal sticks. If your bread is fresh, spread the sticks on a baking sheet and bake at 350Β°F (175Β°C) for 8β10 minutes to lightly dry them outβthis prevents sogginess.
Make the batter: In a shallow dish (like a pie plate or rectangular baking dish), whisk together eggs, milk, pumpkin purΓ©e, vanilla, cinnamon, and pumpkin pie spice until smooth and fully blended.
Heat the skillet: Melt a small pat of butter or use a neutral oil in a large nonstick skillet over medium heat.
Dip and cook: Working in batches, dip each bread stick into the pumpkin batter, turning to coat both sides evenly. Let excess drip off, then place in the hot skillet. Cook for 2β3 minutes per side, until deeply golden and crisp.
Coat in cinnamon sugar: While the toast cooks, mix sugar and cinnamon in a clean shallow dish. As soon as each stick comes off the skillet, roll it in the cinnamon sugar while still warm so the coating sticks.
Serve immediately with warm maple syrup, buttered pecan syrup, or a dusting of powdered sugar.
