Chicken Parmesan Soup
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups cooked, shredded chicken
- 1/2 cup pasta (such as mini shells or elbows)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Bread for serving
Instructions:
1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the onion and cook until softened, about 3-4 minutes. Add the garlic, Italian seasoning, and red pepper flakes, and cook for another minute.
2. Simmer: Add the chicken broth and diced tomatoes (including their juice) to the pot. Bring to a simmer.
3. Cook Pasta: Add the pasta and cook according to package instructions until al dente.
4. Add Chicken: Stir in the cooked, shredded chicken and let it heat through.
5. Finish with Cheese: Stir in the Parmesan cheese until melted and the soup is creamy. Season with salt and pepper to taste.
6. Serve: Ladle the soup into bowls, garnish with fresh basil or parsley, and serve with crusty bread.
