Ingredients:
1 tablespoon butter
1 onion, diced
3 cloves garlic, minced
4 cups beef broth
1 cup shredded Swiss cheese
1 cup heavy cream
1/2 pound corned beef, chopped
4-5 jalapeƱos, sliced (adjust for spice level)
Salt and pepper to taste
4 slices rye bread, cubed and toasted (for garnish)
Fresh parsley, chopped (for garnish)
Directions:
In a large pot, melt butter over medium heat. Add diced onion and minced garlic, sautƩing until softened and fragrant.
Add the beef broth and bring to a simmer. Cook for 10 minutes to allow flavors to develop.
Stir in shredded Swiss cheese and heavy cream, stirring until the cheese is melted and the soup is creamy.
Add the chopped corned beef and sliced jalapeƱos to the pot. Season with salt and pepper to taste.
Serve hot, topped with toasted rye bread cubes and fresh chopped parsley if desired.
