.BISCUITS AND GRAVY:
1/2lbs breakfast sausage (or pork mince seasoned with salt pepper thyme and sage 1/4 teaspoon each) 2 slices breakfast bacon (1/8 cup pork lardons) brown, add 2 tablespoons white flour, whisk over low heat,for at least a minute, it should coat the sausage and very lightly brown, add a tablespoon butter, whisk to incorporate (this is the roux), over medium heat add 2 cups cold milk (dairy, cows milk, 2%milk fat) whisk over medium heat until it simmers, remove from heat, add pepper and a little salt to taste. It will continue to thicken as you set the table. Everyone gets 2 sausage patties, a biscuit, split the biscuit, butter if you want, top with sausage, smother with the gravy, eat with a knife and fork.
Sides include cheesy eggs, another biscuit with butter and strawberry jelly, a spoon to eat the rest of the gravy with and a whole day of movies to watch after the meal.
