Easy & Delicious Blackberry Chia Seed Breakfast Bowls You'll Love! 🌱🥣

Ingredients:
1/2 cup (80g) chia seeds
2 cups (480ml) unsweetened plant-based milk (almond, soy, oat)
1 cup (150g) blackberries (fresh or frozen, thawed)
1-2 tablespoons maple syrup or agave nectar (optional, adjust to taste)
1 teaspoon vanilla extract
Toppings: Extra blackberries, nuts (slivered almonds, walnuts), seeds (hemp, pumpkin), shredded coconut, granola

Directions:
1. In a medium bowl or jar, combine the chia seeds, plant-based milk, optional maple syrup/agave, and vanilla extract.
2. Whisk everything together very well, ensuring there are no clumps of chia seeds.
3. Let the mixture sit for 5 minutes, then whisk again thoroughly to break up any remaining clumps.
4. Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight, until the pudding is thick and set.
5. While the pudding chills, you can prepare the blackberry component. Either gently mash about half of the blackberries with a fork to create a chunky sauce or blend half the berries until smooth. You can sweeten this slightly if desired.
6. Once the chia pudding is set, you can either swirl the mashed/blended blackberries into the pudding or layer it.
7. Divide the blackberry chia pudding between two bowls.
8. Add your desired toppings generously – fresh blackberries, nuts, seeds, coconut flakes, or a sprinkle of granola.
