Crumble Coffee Cake
Ingredients:
For the cake:
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 tsp vanilla extract
1 cup sour cream
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
For the streusel topping:
1/2 cup packed brown sugar
1/2 cup all-purpose flour
1/2 tsp ground cinnamon
1/4 cup unsalted butter, cold and cut into small cubes
1/2 cup chopped nuts (optional, e.g., walnuts or pecans)
Instructions:
1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
2. Make the streusel topping: In a small bowl, combine the brown sugar, flour, and cinnamon. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture becomes crumbly. If using, stir in the chopped nuts. Set aside.
3. Prepare the cake batter: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Add dry ingredients and sour cream: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Start and end with the dry ingredients, mixing until just combined.
5. Assemble the cake: Pour half of the cake batter into the prepared pan. Sprinkle half of the streusel topping over the batter. Add the remaining batter on top, and then sprinkle the rest of the streusel topping evenly over the top.
6. Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
7. Serve: Slice and enjoy your homemade coffee cake with a cup of coffee or tea!
