Ribeye Steak with French Onions & Mushrooms
Ingredients:
2 ribeye steaks (about 1 inch thick)
1 large onion, thinly sliced
8 oz mushrooms, sliced (cremini or button)
3 tbsp butter
2 tbsp olive oil
2 cloves garlic, minced
1 tsp thyme (fresh or dried)
Salt and pepper to taste
Fresh parsley for garnish

Prepare the Onions: In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized (about 15-20 minutes). Add a pinch of salt to help them soften.
Sauté the Mushrooms: In the same skillet, add another tablespoon of butter and the sliced mushrooms. Cook until they are golden brown and tender (about 5-7 minutes). Stir in the minced garlic and thyme, cooking for an additional minute. Set aside.
Season the Steaks: While the onions and mushrooms are cooking, season the ribeye steaks generously with salt and pepper on both sides.
Cook the Steaks: In a separate skillet, heat the olive oil over high heat. Once hot, add the ribeye steaks and sear for about 4-5 minutes on each side for medium-rare (adjust time for your preferred doneness). Let the steaks rest for a few minutes after cooking.
