Mediterranean Shrimp with Olive Oil Pasta

Zesty Olive Oil Pasta with Garlic-Herb Shrimp

Ingredients:

300g penne or spaghetti pasta

450g large shrimp, peeled and deveined

3 tablespoons extra virgin olive oil

1 tablespoon lemon juice

Zest of 1 lemon

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup kalamata olives, pitted and halved

1/4 teaspoon crushed red pepper flakes (optional)

1/2 teaspoon dried oregano

1/2 teaspoon sea salt

Freshly ground black pepper to taste

1/4 cup fresh parsley, chopped

Optional garnish: feta cheese crumbles (dairy or plant-based)

Directions:

Cook pasta in salted boiling water according to package instructions until al dente. Drain and set aside.

In a large skillet over medium heat, heat olive oil. Add garlic and sauté for 30 seconds until fragrant.

Add shrimp, lemon juice, zest, oregano, salt, pepper, and red pepper flakes. Cook shrimp for 2–3 minutes on each side until pink and opaque.

Stir in cherry tomatoes and olives. Cook for another 2 minutes until tomatoes start to soften.

Toss cooked pasta into the skillet and combine everything well. Add chopped parsley and adjust seasoning if needed.

Serve hot, garnished with optional feta and a drizzle of olive oil.
