Spiced Vegan Sweet Potato Ginger Patties for Light Lunch 🍠🍛🌿
Ingredients:
2 medium Sweet Potatoes (about 1 lb / 450g), peeled and cubed
1 tbsp Fresh Ginger, finely grated
1 small Onion, finely chopped
0.5 cup / 60g Chickpea Flour (or breadcrumbs)
2 tbsp Fresh Cilantro, chopped
1 tsp Curry Powder
0.5 tsp Cumin Powder
0.5 tsp Salt, or to taste
0.25 tsp Black Pepper
2-3 tbsp Oil, for pan-frying (like avocado or coconut oil)
Directions:
1. Steam or boil the sweet potato cubes until very tender (about 15-20 minutes). Drain well and let cool slightly.
2. Mash the cooked sweet potatoes thoroughly in a large bowl.
3. Add the grated ginger, chopped onion, chickpea flour, chopped cilantro, curry powder, cumin powder, salt, and pepper to the mashed sweet potato.
4. Mix everything together until well combined. The mixture should be firm enough to form patties. If it's too wet, add a little more chickpea flour.
5. Form the mixture into small to medium-sized patties (about 6-8 patties).
6. Heat the oil in a large skillet or frying pan over medium heat.
7. Carefully place the patties in the hot oil (work in batches if necessary to avoid overcrowding).
8. Cook for 4-5 minutes per side, or until golden brown and heated through.
9. Transfer the cooked patties to a plate lined with paper towels to absorb any excess oil.
10. Serve warm, perhaps with a dollop of plant-based yogurt or a chutney.
