Strawberry Filled Cupcakes with Vanilla Buttercream 🧁✨
Ingredients
For the Vanilla Cupcakes:
1 ½ cups (190g) all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup (113g) unsalted butter, softened
¾ cup (150g) granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
½ cup (120ml) whole milk, room temperature
For the Strawberry Filling:
1 cup (150g) fresh strawberries, diced
2 tablespoons granulated sugar
1 teaspoon lemon juice
1 teaspoon cornstarch (optional, for thickening)
For the Vanilla Buttercream Frosting:
1 cup (226g) unsalted butter, softened
3 cups (360g) powdered sugar
2 tablespoons heavy cream or milk
1 teaspoon vanilla extract
Instructions
Step 1: Make the Vanilla Cupcakes
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, beat butter and sugar until light and fluffy (about 2-3 minutes).
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Mix in half of the dry ingredients, followed by milk, then the remaining dry ingredients.
Divide batter evenly among cupcake liners, filling each about ⅔ full.
Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
Let cupcakes cool completely before filling and frosting.
Step 2: Make the Strawberry Filling
In a small saucepan, combine strawberries, sugar, and lemon juice over medium heat.
Stir frequently, cooking for 5-7 minutes, until strawberries soften and release their juices.
If the mixture is too thin, stir in cornstarch and cook for another 1-2 minutes until thickened.
Remove from heat and let cool completely.
Step 3: Fill the Cupcakes
Use a small knife or cupcake corer to remove the center of each cupcake.
Spoon or pipe strawberry filling into the hole.
Step 4: Make the Vanilla Buttercream Frosting
In a large bowl, beat butter until smooth and creamy.
Gradually add powdered sugar, beating on low until combined.
Mix in heavy cream and vanilla extract, then beat on high speed for 2-3 minutes until fluffy.
Step 5: Frost & Decorate
Pipe or spread the vanilla buttercream onto the cupcakes.
Garnish with a fresh strawberry slice or sprinkles for an extra touch!
