Ingredients:
5 medium potatoes, peeled and diced
2 medium onions, sliced
2 tablespoons butter
Salt and pepper to taste
1 tablespoon brown sugar
1 teaspoon thyme (optional)
Directions:
In a large skillet, melt the butter over medium heat.
Add the diced potatoes and cook, stirring occasionally, for about 10-15 minutes until they begin to crisp up.
In a separate pan, cook the sliced onions over low heat with the brown sugar until they are caramelized, about 15 minutes.
Once both the potatoes and onions are cooked, combine them in the skillet, season with salt, pepper, and thyme.
