🍗 Chicken, Spinach, and Mushroom Low-Carb Oven Dish

Ingredients:
2 tbsp olive oil
1 lb boneless skinless chicken breasts, sliced thin
Salt and pepper, to taste
1 tsp garlic powder
1 small onion, sliced
2 cups mushrooms, sliced
2 cups fresh spinach
½ cup heavy cream
½ cup grated Parmesan cheese
1 cup shredded mozzarella cheese

Instructions:
1️⃣ Preheat Oven:
Preheat oven to 375°F (190°C).
Lightly grease a 9x13-inch baking dish.
2️⃣ Cook Chicken:
Heat 1 tbsp oil in a skillet over medium heat.
Season chicken with salt, pepper, and garlic powder.
Cook for 3–4 minutes per side until lightly browned (not fully cooked).
Transfer to baking dish.
3️⃣ Sauté Veggies:
In the same skillet, add remaining 1 tbsp oil.
Sauté onions and mushrooms for 4–5 minutes.
Add spinach and cook until wilted, about 1 minute.
Spoon mixture over chicken in baking dish.
4️⃣ Add Cream and Cheese:
Pour heavy cream evenly over the top.
Sprinkle with Parmesan and mozzarella.
5️⃣ Bake:
Bake uncovered for 20–25 minutes, until bubbly and chicken is fully cooked.
