🦐 Garlic Butter Shrimp Scampi Lasagna
Ingredients:
1 lb large shrimp, peeled and deveined
9 lasagna noodles, cooked and drained
4 tbsp butter
4 cloves garlic, minced
2 tbsp lemon juice
2 tbsp chopped parsley
½ tsp red pepper flakes (optional)
1½ cups ricotta cheese
1 egg
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
Salt and pepper, to taste
Instructions:
1️⃣ Prepare Garlic Butter Shrimp:
In a large skillet, melt butter over medium heat.
Add garlic and cook for 1 minute.
Add shrimp, lemon juice, red pepper flakes, salt, and pepper.
Cook for 3–4 minutes until shrimp are pink and cooked through.
Remove from heat and stir in parsley. Set aside.
2️⃣ Make Ricotta Mixture:
In a bowl, mix ricotta cheese, egg, a pinch of salt, and ½ cup Parmesan cheese.
3️⃣ Assemble Lasagna:
In a greased 9x13-inch baking dish, layer 3 lasagna noodles, half the ricotta mixture, half the shrimp, a sprinkle of mozzarella and Parmesan.
Repeat layer once more.
Top with final 3 noodles and remaining mozzarella and Parmesan.
4️⃣ Bake:
Cover with foil and bake at 350°F (175°C) for 25 minutes.
Uncover and bake for another 10 minutes until bubbly and golden.
Let rest 10 minutes before slicing.
