Incredibly Moist & Healthy Almond Flour Chia Banana Bread Delight 🍌🍞✨
Ingredients
3 large ripe bananas, mashed
1/4 cup (60ml) melted coconut oil or light olive oil
1/4 cup (60ml) maple syrup or agave nectar
2 large eggs (or flax eggs for vegan: 2 tbsp flaxseed meal + 6 tbsp water, let sit 5 mins)
1 tsp (5ml) vanilla extract
1 1/2 cups (168g) almond flour, finely ground
1/2 cup (60g) tapioca starch or arrowroot powder
1 tsp (5g) baking soda
1/2 tsp (2g) ground cinnamon
1/4 tsp (1g) ground nutmeg
1/4 tsp salt
2 tbsp (25g) chia seeds
Optional: 1/2 cup (75g) chopped walnuts or dairy-free chocolate chips
Directions
1. Preheat oven to 350°F (175°C). Grease and flour (using almond flour) a 9x5 inch (23x13 cm) loaf pan.
2. In a large bowl, combine mashed bananas, melted oil, maple syrup, eggs (or flax eggs), and vanilla extract. Mix well.
3. In a separate bowl, whisk together almond flour, tapioca starch, baking soda, cinnamon, nutmeg, and salt.
4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
5. Gently fold in the chia seeds and any optional add-ins (walnuts or chocolate chips).
6. Pour batter into the prepared loaf pan and spread evenly.
7. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
8. Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Slice and serve.
