Grilled Halloumi with Scrambled Eggs & Sautéed Mushrooms & Tomatoes 🍅🍄

📝 Ingredients:
For the Grilled Halloumi:
4 slices halloumi cheese
1 tsp olive oil
For the Scrambled Eggs:
3 large eggs
1 tbsp butter or olive oil
1 tbsp milk (optional, for fluffiness)
½ tsp salt
½ tsp black pepper
½ tsp smoked paprika (for garnish)
For the Sautéed Mushrooms & Tomatoes:
½ cup cherry tomatoes, halved
½ cup mushrooms, sliced
1 tsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
🍽️ Directions:
1️⃣ Grill the Halloumi:
Heat a non-stick pan over medium heat.
Lightly brush halloumi slices with olive oil and grill for 1-2 minutes per side until golden brown.
2️⃣ Scramble the Eggs:
In a bowl, whisk eggs with milk, salt, and black pepper.
Heat butter in a non-stick skillet over medium-low heat.
Pour in the eggs and stir gently with a spatula, folding them as they cook.
Remove from heat when soft and slightly creamy.
Sprinkle with smoked paprika.
3️⃣ Sauté the Mushrooms & Tomatoes:
Heat olive oil in a pan over medium heat.
Add sliced mushrooms and cook for 3-4 minutes until softened.
Stir in cherry tomatoes, salt, black pepper, and garlic powder.
Cook for another 2 minutes until tomatoes soften slightly.
4️⃣ Assemble & Serve:
Plate the grilled halloumi, scrambled eggs, and sautéed mushrooms & tomatoes.
