Ingredients (Serves 4)
- ¼ cup ghee or butter, divided
- 1 tbsp olive oil
- 1 lb Yukon Gold potatoes, cut into ½-inch cubes
- 3 garlic cloves, minced
- 1 tsp dried thyme
- ½ tsp dried oregano
- ½ tsp sea salt (plus more to taste)
- ¼ tsp ground black pepper (plus more to taste)
- 1 ¼ lbs sirloin steak, cut into ½-inch cubes
Directions
1️⃣ Cook the Potatoes:
- Heat a large cast-iron skillet over medium heat. Add olive oil and 2 tbsp of ghee.
- Once melted, add potatoes and sprinkle with garlic, thyme, oregano, salt, and pepper.
- Cook for 2–3 minutes, then stir and cook for another 8–10 minutes, stirring frequently, until golden and tender. Set aside.
2️⃣ Sear the Steak:
- Increase heat to medium-high. Add remaining 2 tbsp of ghee to the skillet.
- Add steak cubes and season with salt and pepper. Let them sear for 2 minutes without stirring to get a good crust. Stir and cook for 1–2 more minutes until golden brown.
3️⃣ Combine and Serve:
- Add cooked potatoes back to the skillet, stirring to combine. Adjust seasoning with more salt and pepper if needed.
- Garnish with freshly chopped parsley and serve hot!
