Strawberry Oatmeal Breakfast Bars

Ingredients:

1 1/2 cups old-fashioned rolled oats
1 1/4 cups all-purpose flour
1/2 cup brown sugar, packed
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
3/4 cup unsalted butter, melted
2 cups chopped fresh strawberries
1/4 cup granulated sugar
2 teaspoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract

Directions:

Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
In a bowl, mix oats, flour, brown sugar, salt, baking soda, and cinnamon. Pour in melted butter and stir until crumbly.
Press 2/3 of the oat mixture into the bottom of the prepared pan to form the crust.
In another bowl, combine strawberries, granulated sugar, cornstarch, lemon juice, and vanilla.
Spread the strawberry mixture evenly over the crust.
Sprinkle the remaining oat mixture on top of the strawberries.
Bake for 35–40 minutes, or until golden brown and bubbling.
Allow to cool completely in the pan before slicing into bars.
