Slow-Cooked Beef & Cheese Tortellini
This Slow-Cooked Beef & Cheese Tortellini is a hearty, comforting dish featuring tender beef stew meat and cheesy tortellini in a rich, creamy sauce. Perfect for a cozy meal that practically cooks itself while you go about your day!
Ingredients:
1 lb beef stew meat, cut into bite-sized pieces
1 tbsp olive oil
3 cups beef broth
1 can (14.5 oz) diced tomatoes, undrained
1 tsp Italian seasoning
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
½ tsp black pepper
1 package (20 oz) refrigerated cheese tortellini
1 cup heavy cream
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
Fresh parsley for garnish
Directions:
Sear the beef: Heat olive oil in a large skillet over medium-high heat. Add the beef stew meat and cook for 3-4 minutes until browned on all sides. Transfer the beef to the slow cooker.
Add the liquids and seasonings: To the slow cooker, add beef broth, diced tomatoes (with their juices), Italian seasoning, garlic powder, onion powder, salt, and black pepper. Stir to combine and cover the slow cooker with its lid.
Slow cook: Set the slow cooker to low and cook for 6-7 hours, or until the beef is tender and fully cooked.
Add the tortellini: About 30 minutes before serving, stir in the refrigerated cheese tortellini. Cover the slow cooker and cook on low for an additional 30 minutes, or until the tortellini is tender.
Make it creamy: Once the tortellini is cooked, stir in the heavy cream, shredded mozzarella cheese, and grated Parmesan cheese. Let it cook for an additional 5 minutes until the cheese is melted and the sauce is creamy.
Serve: Spoon the beef and tortellini mixture into bowls. Garnish with fresh parsley and serve hot.
