Chicken and Dumplings
Ingredients:
1 whole chicken (about 3-4 pounds)
8 cups chicken broth
1 medium onion, chopped
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper to taste
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup butter, melted
3/4 cup milk
Directions:
In a large pot, place the whole chicken and cover it with chicken broth. Bring to a boil, then reduce the heat and simmer for about 1 hour, or until the chicken is cooked through and tender. Remove the chicken from the pot and let it cool. Once cool, shred the chicken into bite-sized pieces, discarding the bones and skin.
In the same pot, add the chopped onion, sliced carrots, sliced celery, minced garlic, thyme, parsley, salt, and pepper. Cook over medium heat until the vegetables are tender, about 10 minutes.
While the vegetables are cooking, prepare the dumplings. In a mixing bowl, combine the flour, baking powder, and salt. Stir in the melted butter and milk until just combined. The dough should be thick but not dry.
Return the shredded chicken to the pot with the vegetables. Drop spoonfuls of the dumpling batter over the chicken and broth mixture. Cover the pot with a lid and let the dumplings steam for about 15-20 minutes, or until they are fluffy and cooked through.
