Roasted Potatoes with Baked Feta and Garlic
Ingredients:
1 ½ lbs baby potatoes, halved
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
1 block (7 oz) feta cheese
1 tablespoon honey
½ teaspoon red pepper flakes (optional)
2 tablespoons fresh parsley, chopped
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, toss the halved potatoes with olive oil, garlic, oregano, salt, and black pepper. Spread them on the baking sheet in a single layer.
Roast the potatoes for 25 minutes, stirring halfway through.
Push the potatoes to the sides and place the feta block in the center. Drizzle the feta with a little olive oil and honey, then sprinkle with red pepper flakes.
Return to the oven and bake for another 10 minutes, until the feta is soft and slightly golden.
Remove from the oven, sprinkle with fresh parsley, and serve warm.
