Ingredients:
For the Chicken:
2 chicken breasts, sliced into strips 🍗
1 tbsp olive oil 🫒
1 tsp dried Italianherbs (or oregano, thyme, basil)
1 garlic clove, minced 🧄
Salt & pepper to taste
For the Roasted Vegetables:
1 zucchini, sliced into rounds 🥒
1 red bell pepper, sliced 🌶
1 yellow bell pepper, diced 🫑
1 carrot, julienned 🥕
½ bunch asparagus, trimmed 🌿
1 tbsp olive oil
Salt, pepper, and a pinch of herbs
Instructions:
Marinate the Chicken: Combine chicken strips with olive oil, herbs, garlic, salt, and pepper. Let sit for 10–15 minutes.
Grill the Chicken: Cook chicken on a grill pan or outdoor grill over medium-high heat for 4–5 minutes per side until cooked through and slightly charred.
Roast the Veggies: Toss all vegetables with olive oil, herbs, salt, and pepper. Spread on a baking sheet and roast at 200°C (400°F) for 15–20 minutes until golden and tender.
Serve: Arrange the grilled chicken and roasted veggies on a plate. Optionally, drizzle with lemon juice or your favorite dressing.
Tips & Variations:
Add sweet potato cubes or broccoli for more variety.
Serve with hummus, tzatziki, or quinoa for extra flavor and texture.
